Sugar-free pumpkin spice syrup? A no-added-sugar date recipe

In short: a pumpkin spice syrup with no added sugar takes 15 minutes to make with dates, water and Pumpkin Spice Latte powder (pumpkin, date, cinnamon, ginger, nutmeg). All of the sweetness comes from the fruit, with no white sugar and no sweetener. It keeps for about a week in the fridge and flavours coffee, lattes, chai or porridge.

Every autumn the same question pops up in search engines, in French as well as in Romanian, Polish and Swedish: is there such a thing as a sugar-free pumpkin spice syrup? Coffee shop syrups are, first and foremost, sugar. The "zero sugar" versions you find in shops swap that sugar for sweeteners. And most homemade recipes, our own syrup recipe included, rely on brown sugar.

A word of honesty: "no added sugar" does not mean "sugar-free". Dates naturally contain sugars, along with their fibre. The point lies elsewhere: no refined sugar, no sweetener, and an ingredient list you can read at a glance.

The no-added-sugar pumpkin spice syrup recipe

Ingredients (makes about 250 ml)

  • 120 g pitted dates
  • 300 ml water
  • 3 level tablespoons Pumpkin Spice Latte powder
  • 1 pinch of salt (optional, it brings out the spices)

Equipment

  • A small saucepan
  • A stick blender or a jug blender
  • Cheesecloth or a fine sieve (optional)
  • A clean, completely dry jar or bottle

Method

  1. Cook the dates: put the dates and water in the saucepan, bring to a simmer, then cook gently over low heat for 10 minutes until very soft.
  2. Blend: off the heat, blend the dates with their cooking water until perfectly smooth and creamy.
  3. Add the spices: stir in the Pumpkin Spice Latte powder and the pinch of salt, then blend again for a few seconds. Adding the powder off the heat protects the aroma of the spices.
  4. Strain (optional): for a runnier syrup, pass it through cheesecloth, squeezing well. You will get less volume but a texture close to a classic syrup.
  5. Store: pour into a clean jar, leave to cool and keep in the fridge for about 1 week. Shake before each use.

Tip: if the syrup is too thick after a night in the fridge, loosen it with one or two tablespoons of hot water.

The mistakes that spoil a date syrup

  • Boiling the spices: a long boil flattens the cinnamon and nutmeg. The dates cook on their own; the powder goes in off the heat.
  • Adding too much water: beyond 300 ml for 120 g of dates, the syrup turns into a drink. Better to thin it afterwards, a spoonful at a time.
  • Not blending enough: a few pieces of date are all it takes to leave a gritty texture in the cup. Blend for at least a minute, or strain.
  • Using a damp jar: without lots of sugar to protect it, the syrup is more delicate. Clean, dry jar, clean spoon every time.
  • Keeping it too long: one week in the fridge, no more. To have some on hand for longer, freeze it in an ice cube tray: one cube is roughly one serving for a latte.

Why dates rather than maple syrup or honey? Because they bring sweetness, body and a caramel note all at once, without adding isolated sugar. Dates are also what already sweeten the Pumpkin Spice Latte powder: the syrup simply follows the same logic.

Six ways to use it

  • In a caffè latte: 1 to 2 tablespoons in the bottom of the cup, a shot of espresso, then hot frothed milk. That is the "coffee shop pumpkin spice latte", in a no-added-sugar version.
  • Caffeine-free: same method with barley coffee instead of espresso, for an evening cup.

  • At breakfast: on porridge, yoghurt or pancakes, in place of maple syrup.

What does pumpkin spice taste like?

That is the other big question that keeps coming up in searches, from Germany to Finland.
