🥭 Passion Fruit Concentrate : At the heart of each pearl is a 2.8% passion fruit syrup, made from juice based on a 40% concentrate. This concentration ensures exceptional aromatic intensity that captures the very essence of maracujá: that bright, sparkling tang and so recognizable tropical sweetness. A natural aroma enhances the flavor profile for an optimal sensory experience.
🌊 The Spherical Shell : The magic happens thanks to spherification, a technique borrowed from molecular gastronomy by top chefs. This ultra-fine membrane is made ofsodium alginate (marine algae extract), of calcium lactate and of calcium chloride. These natural gelling agents create a delicate plant-based barrier that protects the liquid until the moment of tasting. It’s this light resistance followed by the liquid burst that makes the popping boba experience so unique.
☀️ Naturally Golden Glaze : Our pearls showcase their signature yellow-orange hue thanks to beta-carotene, a 100% naturally sourced pigment found in particular in carrots. We refuse synthetic colorants, choosing instead this natural approach that delivers a sunny look—perfectly suited to tropical creations.
💧 The Conservation Syrup The pearls rest in a water-and-glucose blend that preserves their freshness and maintains their optimal texture until the moment you enjoy them. This lightly sweet liquid can also be used to subtly flavor your drinks.
🔬 Natural stabilizers To achieve the ideal texture, we also use de la xanthan gum and de la guar gum (thickeners of plant origin), as well as a little CMC (carboxymethylcellulose) to stabilize everything. The potassium sorbate ensures the product is preserved for 18 months before opening. Acidity regulators (citric acid and lactic acid) adjust the pH to 3.82, guaranteeing microbiological stability.
Our quality commitment? Pearls made in France, subject to monthly microbiological controls in an approved laboratory, and pasteurized according to the strictest HACCP standards. Each jar contains about 300g of drained pearls (out of a total of 450g with the syrup), enough to create 15 to 20 delicious recipes.

Storage: Before opening, store your jar at room temperature (less than 30°C), in a dry place and away from direct light. Do not freeze. After opening, refrigerate between +2°C and +5°C and consume within 14 days. Make sure the pearls remain submerged in their preserving liquid.
