Green Tea is a non-fermented tea made from the fresh leaves of Camellia sinensis, the tea plant. Originally from China and cultivated for over 4,000 years, it is now produced in many regions: China, Japan, Korea, India, and Sri Lanka. Unlike black tea, green tea leaves are quickly heated after picking to stop oxidation, preserving their green color and natural properties.
Green tea production follows a meticulous, age-old process. After picking, the leaves are immediately fixed with heat (steam in Japan, dry heat in China) to halt oxidation. They are then rolled and dried. This method preserves the tea’s natural antioxidants and gives green tea its signature vegetal notes. Some of the most renowned varieties include Japanese Sencha, Chinese Gunpowder, and Jasmine Dragon Pearls.
Green Tea is packed with natural benefits. Rich in catechins (especially EGCG), it has outstanding antioxidant properties that help fight cellular aging. Its moderate caffeine gives a gentle, sustained energy boost without the spikes and crashes of coffee. It also supports metabolism, promotes focus, and boosts the immune system. Its L-theanine content provides a uniquely relaxing effect.
Preparing green tea requires delicacy and precision. Use water between 158°F and 176°F (never boiling!) and steep for no more than 2 to 3 minutes. Water that's too hot or steeping too long releases tannins and makes the tea bitter. Pure Tea Tip: pour a little cold water into your cup first, add the hot water, then the leaves. This method ensures gentle extraction and preserves the aromas.
The main difference lies in the level of oxidation. Green tea is not fermented (0% oxidation), unlike black tea (100% oxidized) or Oolong tea (partially oxidized). This lack of fermentation preserves the green color of the leaves, the natural antioxidants, and gives fresh, vegetal aromas. Green tea also contains less caffeine than black tea, while offering a more subtle and refined taste experience.
Green tea is perfect in the morning and early afternoon thanks to its moderate caffeine content that stimulates without overstimulating. Avoid drinking it in the evening if you're sensitive to caffeine. Its L-theanine promotes a state of focused relaxation, perfect for work or meditation. Sensitive individuals can opt for decaffeinated green teas or limit themselves to 2–3 cups per day.
Green tea is more delicate than other teas and requires special care. Store it in a cool, dry, dark place, ideally in the fridge in an airtight container.
